HEALTHY SNACK: Seaweed Strips – Nori, or seaweed, is easy to find in Asian supermarkets or the international section of your grocery store. Seaweed is actually a delicious and healthy snack that will make your child feel just like Otter! You can either buy roasted seaweed snacks at stores like Trader Joe’s, or you can easily make your own. On a lined baking sheet, brush 6 nori strips with water and lay them on top of one another, so they are “buddied up.” Now stuck together, cut the stack into one-inch strips. Do this with the rest of the remaining nori sheets. Then, brush each “chip” with a light layer of sesame oil, and sprinkle with salt. Bake at 275 degrees for 15 to 20 minutes, until the strips turn a deep, glossy green.

TEACHING TIP: Storytelling supports literacy development. Look for opportunities in your community and in your home to expose your child to storytelling. Most local libraries will have a community storytime event that is open to the public. Use opportunities at home to craft your own stories for children, too (for example, if your child likes milk, make up a story about a cow and tell your child how the cows produce milk).
HEALTHY SNACK: Rainbow Toasts — Make a healthy vegetable ratatouille to keep on hand as a flavorful treat. Slice zucchini, yellow squash, eggplant, and tomatoes in rounds and pieces that are about the same size. It takes a bit of time, but cook them slowly in a pot with olive oil for an hour or two, adding salt, pepper, and thyme. The vegetables will slowly break down and become a delicious rainbow ragout. Stir occasionally to make sure they don’t burn on the bottom of the pan, and add a little water if the veggies are becoming too dry. One it has cooked down, you can store it in tupperware in the fridge for a week or so. Slice a baguette into small pieces and scoop the ratatouille on top of each toast for a colorful and healthy snack.

TEACHING TIP: Literacy learning is a process that defies any streamlining, so try not to force your child into hurrying a certain process. Maybe your child has trouble pronouncing a certain letter, and that is quite normal. Simply continue to work through pronunciation and recognition together, constantly sounding out words and sounds and exposing your child to vocabulary with that letter. The results will come!
HEALTHY SNACK: Global Cheese and Quackers – In learning about global citizenship and people of the world, you can also introduce your child to global awareness and diversity through food. Bring your child to the cheese section of the supermarket and pick out a special cheese or two to try. Maybe mozzarella, from Italy? Queso fresco from Mexico? Make your “cheese and quackers” snack an international experience, and talk about where they come from!
